“Crunchy Mom” Grilled Chicken Blackberry Sandwiches were a fantastic taste surprise to me, even after years of living among the best cooks ever.
So last week my Church Lady Birthday Group pulled off a good one. Three of us flew to Cheraw, South Carolina to surprise a fourth friend at her 60th birthday party. The fourth friend moved away about four years ago, and even though she’s happy where she is, we all still miss each other. And South Carolina is a long way from Arizona! Let’s just say, we haven’t had a lot of reunions in those four years.

You surely know that Church Ladies are the best cooks ever. I learned almost everything I know about good food from the women I go to Church with. And Southern Church Ladies? They have to be the Absolute Genius Best Cooks. The birthday luncheon alone was worth traveling 2000 miles!

And then add “crunchy” to the kitchen, and you get 5 star quality with 10 star health bonuses! Because, you see, my SC friend’s daughter and DILs are scrunchy moms, perhaps leaning slightly more towards crunchy. And now I want to become a scrunchy grandma. Here’s why:

These sandwiches had grown-just-for-this-event alfalfa sprouts on them!
How can you get more crunchy than growing your own microgreens?

Grilled Chicken Blackberry Sandwiches
Ingredients
- Croissants
- Grilled chicken, sliced thin
- Munster or Havarti cheese slices
- Thick bacon, grilled crispy
- Alfalfa sprouts
- Blackberry preserves
- Mayonnaise
Instructions
- Mix the blackberry preserves and mayo together, if desired, in a 1:2 ratio. One part preserves to 2 parts mayo. Our sandwiches were spread separately, first with mayo on one half of a croissant, then a swash of preserves. The little squishies of red showing on the sides made the sandwiches really attractive.
- Stack with chicken slices, cheese, bacon and sprouts.
- Plate and serve!
I don’t have any photos of the serving table. However, along with the sandwiches, there were Sun Chips and a fruit platter. Photos wouldn’t do justice to the ambiance and simple joy of being together. You know how it is with old friends.
Add good food to the reunion and it becomes memorable.
