Raspberry Cloud Dessert Cups

Individual portions are perfect for social distanced occasions.

Ingredients

Sweet and Salty Pretzel Crust

  • 1 1/2 cups pretzel pieces
  • 1/4 cup white sugar
  • 1/2 cup butter, melted

Raspberry Cloud Filling

  • 8 oz. cream cheese, soft
  • 1/2 cup powdered sugar
  • 1 cup vanilla yogurt
  • 8 oz. Cool Whip, thawed, or Whipped Cream, whipped
  • 16 oz. frozen raspberries

Instructions

Sweet and Salty Pretzel Crust

  • Mix the broken pretzels, sugar and melted butter. Spread in a pan and bake at 350° for 10 minutes. Cool and divide into 12 cups or jars, covering the bottom with a 1/2" layer.

Raspberry Cloud Filling

  • Whip softened cream cheese and powdered sugar until smooth.
  • Add the yogurt and cool whip, stirring by hand with a wire whisk.
  • Stir the frozen raspberries into the mixture with a spatula until just mixed.
  • Spoon into cups. Cover with plastic wrap and freeze until an hour before serving.
  • Add a cloud of whipped cream if desired, and garnish with raspberries and mint leaves.
