Streusel-Topped Cappuccino Muffins Recipe
Supplies:
- 12 cup muffin pan, preferably 40 years old with some blackened proof that they’ve turned out countless delicious muffins.
- These muffin papers, because you love pretty on top of scrumptious.
- This 8 cup mixing bowl, (mine was purchased 35 years ago at a flea market) and this whisk, this spatula and this cookie scoop.
- These towels to put the cooling racks on.
- This cake stand to display the muffins while your guests gather around and chat while the coffee is brewing.
- This recipe album to keep track of your favorite recipes.
Muffin Ingredients:
- 2 cups flour
- 3/4 cup sugar
- 3 tsp baking powder
- 1 tsp cinnamon
- 1 tsp salt
- 1 cup milk
- 1 tbsp instant coffee granules
- 1/4 cup oil
- 1 egg
- 1 tsp vanilla
Streusel:
- 1 cup flour
- 3/4 cup sugar
- 1/2 cup butter
Espresso Cream Cheese Frosting:
- 4 oz cream cheese, soft
- 1 tbsp sugar
- 1/2 tsp instant coffee granules or cold espresso to taste
- 1/2 tsp vanilla
Directions:
- Whisk together all the dry ingredients.
- Mix the milk and coffee granules. If you prefer using cold espresso, mix it with the milk to equal 1 cup.
- Add the oil, egg and vanilla to the espresso milk. Mix well and pour into dry ingredients.
- Stir with spatula just until dry ingredients are moistened.
- Add the chocolate chips.
- Scoop into 12 baking cups.
- Top with streusel: Mix the flour and sugar. Shred the cold butter in, and stir with fork until crumbly.
- Bake at 350° for 25 minutes.
- Drizzle with Espresso Cream Cheese Frosting: Mix all the ingredients. Add milk to drizzle consistency if needed.
