at your Spring outdoor distancing baby shower.

This is completely off the topic of raspberry dessert,
but our neighbors are harvesting their carrot field today.
As my son and the g’littles rode their bikes alongside the field,
the farmer stopped the harvester, opened the chute away from the hopper, and poured a little pile out on the ground for them to take home.
Ah, Spring and the smell of fresh-turned earth and the taste of new baby carrots. Mmm.
Here in the Sonoran Desert, we’re almost at spring already,
and the farmers harvest their spring crops now.
The fresh produce that you might be buying in your grocery store as we speak.
Raspberry Cloud Dessert Cups
Last week we floated out some sweet Spring Cloud baby shower ideas,
and this dessert is perfect for an outdoor shower with social distancing.
Individual dessert cups for safe handling.
You might not be at the place in your spring where you want to plan an outdoor shower,
so save this post to Pinterest for later in the season when it’s warm enough.
What You Need:
- Clear plastic cocktail cups or 1/2 pint canning jars
- Wooden or plastic spoons
- Charcuterie board or large serving tray
- Recipe ingredients
- Extra whipped cream, fresh raspberries and mint leaves for garnish if desired.
Raspberry Cloud Dessert Cups
Ingredients
Sweet and Salty Pretzel Crust
- 1 1/2 cups pretzel pieces
- 1/4 cup white sugar
- 1/2 cup butter, melted
Raspberry Cloud Filling
- 8 oz. cream cheese, soft
- 1/2 cup powdered sugar
- 1 cup vanilla yogurt
- 8 oz. Cool Whip, thawed, or Whipped Cream, whipped
- 16 oz. frozen raspberries
Instructions
Sweet and Salty Pretzel Crust
- Mix the broken pretzels, sugar and melted butter. Spread in a pan and bake at 350° for 10 minutes. Cool and divide into 12 cups or jars, covering the bottom with a 1/2" layer.
Raspberry Cloud Filling
- Whip softened cream cheese and powdered sugar until smooth.
- Add the yogurt and cool whip, stirring by hand with a wire whisk.
- Stir the frozen raspberries into the mixture with a spatula until just mixed.
- Spoon into cups. Cover with plastic wrap and freeze until an hour before serving.
- Add a cloud of whipped cream if desired, and garnish with raspberries and mint leaves.
Serving Ideas
If your baby shower is for a girl, you can make the dessert cups a pretty pastel pink by using raspberry yogurt in the filling instead of vanilla yogurt.
As soon as the frozen cups are soft enough, add the spoons to each cup.
Fill a frosting bag with whipped cream and squeeze “clouds” on top of the individual desserts.
Garnish with a couple of fresh raspberries and a sprig of parsley.
Spread the cups on a large charcuterie board or serving tray. These won’t be able to sit out during the whole shower.
Since you’ll have to bring them to the serving table right at serving time, having them on a board or tray will be handy for transporting. And look good on the serving table!
