The Homemade Ice Cream Recipe You Can’t Live Without
Summer sunshine and sticky licks of frozen goodness go hand in hand. Now even better with this family heirloom homemade ice cream recipe you can’t live without trying at least once.
Homemade ice cream is a treat synonymous with summer.
When the temps rise, we all start thinking of ways to cool down. And we all know that homemade ice cream is “colder” than store bought.
So let’s look for the perfect recipe.
In the good old days when we thought salmonella could maybe be something about a certain type of fish, we used raw eggs in our ice cream.
Now that we know better we only use raw eggs when we’re feeling brave and ol’ fashioned. And when we just have to have that certain ultra-smooth texture that only raw eggs can give.
FoodSafety.gov says there is a way to use raw eggs safely. Buy pasteurized raw eggs. Pasteurized eggs have the same taste and nutrients, with the added bonus of the pasteurization process. They cost more, but you can have your perfect homemade ice-cream in peace and safety.
Aunt Lorraine’s Homemade Ice Cream Recipe
Now that the raw egg worry is taken care of, I’m going to give you our heirloom ice cream recipe. Aunt Lorraine shared this recipe about 50 years ago, and it’s never sent anyone to the ER. (But just to be safe, please use pasteurized eggs if you try it.)
And you will want to try it, because I was never a fan of homemade ice cream until I tasted this recipe. In my homemade ice cream past it was either a bowl of sweet milk crystals or a yucky butter layer sticking to the roof of the mouth. And then Aunt Lorraine happened.
Hers is the creamiest, richest, velvety-est ever! It’s all the superlatives whipped up in one wooden churn.

Tips to make Ol’ Fashioned Ice Cream
If you’ve never used an old fashioned ice cream maker before, here are our tips for success.
- Soak the wooden bucket for a day or so before making ice cream. The wood can dry out, which allows the icy, salty water to leak out.
- Chill the inside metal ice cream bowl in the freezer over night to give the churning a head start.
- Buy bulk crushed ice from Sonic, or another store with great crushed ice. The smoother the crushed ice, the smoother the ice cream!
- This ice cream, filled with so much heavy cream, will not freeze super hard. Run the machine until the ice cream nears the top or the motor begins to lug down slightly.
Recipe for Aunt Lorraine’s Homemade Ice Cream
This ice cream recipe can be made in any freezer, per your freezer’s instructions.

Homemade Ice Cream
Ingredients
- 6 pasteurized eggs
- 2 cups sugar
- 3 cups heavy whipping cream
- 1 1/2 tsp vanilla
- 2/3 tsp salt
- whole milk
To Make the Ice Cream
- 1 box kosher or ice cream salt
- 1 gallon electric ice cream freezer
- crushed ice
Instructions
Mix the Ice Cream
- Beat the eggs well, gradually add sugar and beat until very thick.
- Add cream, vanilla and salt. Beat well again.
- Pour into freezer canister and add whole milk till 1/3 from top of canister.
Freeze the Ice Cream
- Place the canister of ice cream mix into the freezer and place the beater shaft in its slot. Secure the motor head according to the instructions for your particular brand of freezer.
- Pack ice and salt in layers around the canister until the freezer is full. As the ice melts, add more, keeping it full. Start the freezer when the ice is about half way up the sides. Add the rest of the ice while the canister is turning.
- Mix until the freezer seems to be lugging down, meaning the ice cream is getting thick.
- Remove the beater shaft, then let the canister sit in the ice till serving time. Cover it completely with ice if it will be awhile, and insulate it with a quilt or beach towel.
