Frozen Fruit Cup Recipe for a Budget Wedding Menu

yet not look cheap,
are very welcome.

Frozen Fruit Cup Recipe
What You Need:
- 5.5 oz food cups with lids (may be purchased at WalMart)
- cookie sheets or cardboard trays (boxes) to layer the cups for freezing
- food prep gloves (and masks)
- big tub or bowl for mixing the fruit salad
- measuring cups and mixing spoons
The Recipe:
Prepare one cup for each guest, plus a few extra if you think people will be extra hungry.
Our recipe serves 50 people, which is approximately 60 4 oz. servings. However, do 1.5 recipes if you want larger servings.
30 oz. pineapple tidbits, undrained
2 – 16 oz. bag frozen strawberries, chopped when partially thawed
2 – 16 oz. can peaches in heavy syrup, chopped but not drained
10 bananas, firm, sliced thin
8 kiwi, diced
2 – 6 oz. frozen pineapple/orange juice concentrate
24 oz. apricot nectar
2 cups hot water
1 cup sugar if desired
Stir juice, water and sugar thoroughly.
Dice and slice the fruits, then
mix the ingredients in a large food prep tub or bowl.
Measure into serving cups, cover, layer on/in boxes, and freeze.
These would also be excellent served at a brunch.
I plan to make a half recipe of this frozen fruit salad for the Christmas season.
When our son and his family will stay with us for a few days,
and we’ll need food prepped ahead to have time for fun stuff!
