Fabulous Skillet-Fried Green Beans With Crisp Bacon
Last week on the Little Farm by the River, we had these fabulous Skillet-Fried Green Beans with Crisp Bacon. A cast-iron pan sautés this recipe to perfection!
Last week we visited the Little Farm on the River,
and one day I helped my DIL (who henceforth will be known as Mrs. Farmer) get her garden ready for winter.
They moved to their little piece of historic paradise last fall, so this was their first year gardening at this spot.
It had been a garden before, but wow! Talk about the prairie moving back in.
They have an obnoxious weed there called “poison hemlock” which is super poisonous and swiftly takes over a pasture or garden given the least chance. Since the Little Farm is going to be organic, they can’t spray their garden. Mr. Farmer is thinking about getting a farm-size weed burner to get rid of these weeds. He’ll need it.
Meanwhile we used shovels to dig out the roots of as many as we could. She doesn’t plan to use this garden next year, as it needs building up, but these roots can survive frost and a smothering cover of straw, which was going on top as soon as we’d dug all the weeds. Totally obnoxious weeds.
While we were digging hemlock and bursage and thistles out of the garden, we came across some green beans growing their little hearts out. Even though they’ve already had some frost, the green beans were trying to produce.
I thought that green bean gutsiness needed a shout out, so today we’re sharing our favorite recipe for green beans.
Mrs. Farmer made some in her cast iron skillet for dinner, to serve along with pepper steak and rice pilaf. And sourdough biscuits.
It was a fabulous right-off-the-farm feast.
Fabulous Stir-Fried Green Beans With Crisp Bacon
Here’s the simple recipe. The flavor secret is actually in getting a slight charred taste without burning the oil.
Skillet-Fried Green Beans
Ingredients
- 1 tbsp.. canola oil
- 1 lb. green beans frozen, thawed and drained, or fresh, parboiled and drained
- 8 slices bacon crisp fried, drained, and broken into pieces
- 3 cloves garlic minced
- salt and seasoned pepper to taste
Instructions
- Heat the oil in a cast iron skillet and sauté the minced garlic to infuse the flavor. Add the green beans and bacon. Sauté, stirring, until heated. The beans should be slightly firm, and the bacon crispy. Season and serve.
