Years ago, before I even knew how to cook a balanced meal,
I wanted to decorate cakes.
So, I have to admit, I learned the Wilton method long before I knew anything about Ree Drummond or Six Sisters delicious meal making. Hey, it was even before decoding the Betty Crocker cookbook we got for a wedding gift.
I wanted to decorate my own wedding cake, especially after trying so hard to explain my dream cake to the decorator. And then going to pick it up and it’s a disaster. Not at all what I thought I was getting. Sigh. That was the days before Pinterest and finding pictures online to show your decorator what you envision.

And today, cakes are sooo much more beautiful than they were back then.
It’s lucky I don’t have to compete with modern decorators. Even though I still do a cake here and there, it’s not my passion. (But then, neither is meal prepping. You who know us know we do everything the “simple gourmet” way.)
One thing we’ve seen lately, that we just have to try, is something that fits with a stationer’s passion.

Better Homes and Gardens magazine says the sugar sheets are practically tasteless. It’s very thin, and the buttercream frosting used to stick it to the cake is the flavor that comes through, along with the cake flavor itself.
In fact, people who have used it say it makes a much tastier cake than using a lot of fondant that is normal for traditional fancy decorating.
Tips for Using Edible Decorator Wafer Sheets
In researching this product, we found some tips that seem important to share if you’re newbies to this like us.
- Keep the frosting layer on the cake quite thin, so the wafer paper (sometimes called sugar sheets) goes on smoothly.
- Don’t decorate the cake too far ahead of time. Maybe over night, but not longer. The paper softens, they say, and might buckle. Not pretty, I’d guess.
- You might be tempted to frost the cake ahead of time, then add the sheets the day of the party. But don’t, because the frosting has to be damp, so it can act like glue to hold the paper.
- If you have to frost the cake ahead, lightly mist with water to moisten it again, then apply the wafer paper. Just don’t get it too wet, or the paper could begin to disintegrate.
- Trim the paper to size before applying to the cake. A little wafer paper “over the top” is okay, but you don’t want a high retaining wall that makes the cake look amateurish.
