This recipe from my family’s cookbook is different, but just as good.

The BestChipotle Chicken Wraps
Start by cooking the chicken and bacon so it can cool before mixing with the rest of the wrap ingredients.
These wraps are served cold. Which makes it perfect for a spring luncheon.
Chipotle Chicken Wraps
Ingredients
- 2 tbsp. olive oil
- 2.25 lbs. chicken breast, chunked
- 1 tsp garlic powder
- 5 slices bacon
- 1/2 onion, chopped
- 1 bell pepper, chopped
- 2 cups chicken broth
- 1 can black beans
- 2 tsp chili powder
- 2 chipotle peppers in adobo sauce
- 1 tsp cumin
- 1/2 cup sour cream
- 1 cup shredded cheese
- 3 tbsp. fresh cilantro, chopped
- 1 - 2 cup lettuce, chopped
- 1 tomato, chopped
- 1 avocado, chopped
- 4 - 6 whole wheat tortillas, wrap size
Instructions
- Fry chunked chicken in oil with garlic powder.
- Fry bacon. Remove from grease and drain on paper towel. Sauté onion and bell pepper in bacon grease.
- Mix all together with chicken broth, beans, cumin and chipotle peppers. Simmer for an hour.
- Cool and drain off remaining broth. Mix with sour cream, shredded cheese and cilantro.
- Keep refrigerated until 1/2 hour before serving.
- Divide between tortillas, top with lettuce, tomato and avocado.
- Season with salt and pepper as desired. Roll up and wrap with plastic wrap.
- Slice on an angle and plate with cilantro sprigs and a dollop of salsa and sour cream.
What to Serve With the Chipotle Chicken Wraps
Keeping the menu light,
we’ll make a fruit salad with seasonal fruits.
Our season now is fruit that’s available year round. So we’ll start with canned pineapple and cling peaches, then add red grapes, apples and bananas. I have an awesome fruit glaze recipe, but this time we’ll drain most of the juice off and add Clear Jel by Hoosier Hill Farm. A little sugar mixed with the instant thickening powder is like an instant glaze when you add it to moist fruit.
A paper lined wire basket filled with Cantina Thins, which we’ll serve with salsa or a similar dipping sauce.
At each place setting, we’ll set a tall glass of fruit-infused ice water with a slice of lemon and/or some of the fresh fruits purchased for the fruit salad.
Set the Luncheon Table
Let’s set a simple luncheon table.
There will be men at this table, so we don’t want it too frou-frou.
We’ll grab our little terracotta pots and place a simple Walmart garden-spot flowered plant in each. Add bagged moss to hide the dirt.
Line them up center table, with additional moss on the table. Add faux birds and eggs and fresh leafy twigs on the moss around the pots.
I wish I had these plates to serve this meal, but I’ll substitute with my usual white-with-gold-rim china.
Add a Light Dessert and Coffee Drink
We’ll top off this luncheon with Sopapilla Cheesecake and coffee.
The cheesecake is sweet enough that most will not want a flavored or sweetened coffee drink.
The best part of this casual luncheon, of course, will be sitting around the table with friends.
